Ingredients for making kachori
- Menda - 1 cup
- Mug dal - 1 cup
- Gram flour - 2 tbsp
- Red Chilli Powder – 1/2 Tablespoon
- Cumin - 1 tablespoon
- Fennel - 1 tablespoon
- Turmeric - 1/2 tablespoon
- Asafoetida - 1 pinch
- Amchur - 1/2 tablespoon
- Coriander – 1 tablespoon
- Oil
- Salt - as per taste
Procedure for making kachori
To make kachori , first soak mung dal in water for at least 3 minutes. After that, extract the water from the dal and grind it in a mixer. After grinding the dal, keep it aside in a vessel. After that take flour in another vessel and add one tablespoon of oil and namak to taste and mix well. After that add little water and knead the dough.
Now take a pan and put oil in it and keep it to heat on medium flame. When the oil gets hot, add cumin seeds, fennel seeds, ghanajeera powder, chilli powder, turmeric and gram flour and mix it. Reduce the gas flame while adding gram flour to the mixture. Now mix dal in this mixture and cook.
After that add amchoor in masala and get namak as per taste. When the dal starts to separate, know that the masala is ready. After that prepare round balls of stuffing. Now take the flour and add some oil to it and knead the dough well once again. Now cut this flour into equal parts and prepare its balls. Now fill it with spices and remove the extra flour.
After that, flatten it and make it thin by pressing it from the edge and make it into a small puri shape. Now take an oil in a pan and warmth it. When add kachori in oil , make the flame medium. Now deep fry the kachoris until they turn golden. Now your delicious kachoris are ready. You can serve it with the green or red chutney.
